Triple Chocolate Cake from Tortella Divino

Chocolate cake is a staple dessert in all 195 countries across the six inhabited continents (although I bet you would be hard-pressed to find an Arctic base devoid of the treat). The triple chocolate cake at Tortello Divino, however, is placed above the rest, brought out by the chef himself, and gently dusted with powdered sugar and cocoa powder. The stacked layers of sepia-colored cake cemented together by a smooth, hazelnut fudge dares you to remove the fork from its silhouetted position amongst the sugar and chocolate dusting.

Once you have worked up the courage to disturb the work of art that sits in front of you, the first bite matches its appearance in taste. The layers of cake melt in your mouth and the chocolate falls away to highlight the rich, hazelnut fudge that works with the cake to give the dish a certain dimensionality. The fudge itself would make its own wonderful post-dinner treat; the soft, nutty sweetness refuses to leave your mouth. The richness of the fudge stays plastered in your mouth, in a way that could never be described as anything less than blissful. The layers of cake are masterfully baked, falling perfectly into the category of “moist.” Each bite stays whole for a fleeting moment before slowly fading away into chocolatey goodness.

"It is literally a work of art on your plate." - Jake Sarey

Overall, the cake at Tortello Divino is, in fact,–as the name states–“Divine”. In flavor, appearance and texture, it is everything that a chocolate cake should be. Perfectly prepared, baked and plated, it is definitely a treat that should be on your list of things to try in Arezzo.
